Polenta

Polenta is ground cornmeal boiled with water or stock into a porridge  and eaten directly or baked, fried or grilled. I first came across it in an Italian restaurant and has been wanting to try to make the dish on my own. Turns out it’s really easy.

義大利玉米餅 Polenta 是一個很家常的義大利主要食品。用磨碎的玉米粉做成,加上水攪拌,放上爐子,就可以煮出鬆軟的玉米餅。玉米餅可以做出許多種變化,可以做成軟狀像稀飯的口感,淋上醬汁洋菇蔬菜。又或是做成厚片,拿去燒烤,或者是炸成 Polenta Fries, 發揮想像力,可以做出上百種不同的菜色。

Vegan Polenta

 

Today I have Polenta Stir Fry. Coupled with shitake mushroom, king oyster mushroom, red bell pepper and broccoli, polenta is transformed into the main of tonight’s dinner.

今天的晚餐是炒玉米糕,玉米糕先煮好放冰箱讓它定型,拿出來後切成厚長條狀,跟新鮮香菇杏鮑菇紅椒花椰菜一起炒,口感很像蘿蔔糕呢! 配上新鮮沙拉,橄欖油混義大利陳年香醋,健康營養又美味可口的晚餐就完成。Vegan Polenta
