Astrid y Gaston

Astrid y Gaston is the winner of The World’s 50 Best Restaurants 4 years in a roll. Definitely one of the best restaurants I’ve ever had the pleasure to dine at. It is so popular that their dinner reservations are booked months in advance. Before coming to Peru, I thought my vegan diet was going to pose a great challenge for the trip. To my surprise, it is quite accessible no matter which city we went. Maybe it’s because traditional Peruvian cuisine naturally utilizes a lot of plant based ingredients like quinoa, corn, rice, potatoes, and all kinds of legume. Can you believe that there are close to 4000 different types of Peruvian potatoes?!
